Zucchini Banana Bread

  • 3 cups flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1-1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 cup vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 1-1/2 cups grated zucchini
  • 1-1/2 cups mashed bananas (about 3 med.)
  • 1 cups chopped nuts, optional

Grease and flour a 10-inch fluted tube pan. Preheat oven to 350° F. In a large bowl, combine flour, baking powder, baking soda, cinnamon, and salt; set aside. In a separate large bowl, combine oil and sugar; blend well. Add eggs; blend well. Blend in zucchini and bananas. Gradually blend in flour mixture. Stir in nuts, if desired. Pour into prepared pan. Bake for 1 hour 15 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack.
