Pumpkin Pie Cake

  • 1 large can pumpkin
  • 6 eggs
  • 1-1/2 cup sugar
  • 2 cups evaporated milk
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 cube margarine
  • 1 pkg. yellow cake mix

Mix the above ingredients (except margarine and yellow cake mix) and pour into a glass cake pan 9x13. In a bowl cut in 1 cube margarine and 1 pkg. yellow cake mix. Sprinkle the cake mix over the pumpkin. Bake at 350° for 1 hour. Cool before cutting. Great with whipped cream or ice cream.
