Fruit Cake (Gumdrop Cake)
(This is one you won't give away! Happy Holidays!)

  • 3/4 cup shortening
  • 1 cup sugar
  • 2 eggs (well beaten)
  • 1-1/2 cups apple sauce
  • 3-1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup raisins
  • 1 lb. gumdrops
  • 1 cup walnuts

Cream sugar & shortening together. Add well-beaten eggs, add baking soda to applesauce, and add to sugar mixture. Sift all dry ingredients together. Add to other mixture. Add gumdrops, walnuts & Raisin mixture should be stiff or thick. Bake 360° F for 1 hour. Makes 2 medium loaves. Grease pans well.
