Chicken Salad

This is Bonnie's recipe that she had at the last family gathering (that she got from her college roommate).  
  • 10 split chicken breasts.
  • 2-3 bunches of fresh spinich
  • 1 head of lettuce
  • 3/4 c. grated Swiss cheese
  • 1 cup cottage cheese
  • 1 pkg wanton skins (in produce section)

Fry the wantons in oil; brown one side and then the other, then drain, before you put them on the salad.

Boil chicken for 1 to 2 hours on med. heat.  Tear chicken apart to make stringy.  Mix lettuce, spinich and chicken together.  Add cheese and cottage cheese about 1 hour before serving.  Add wantons.

Dressing: Make dressing as guests arrive or right before serving.
  • 1 Tbsp.  poppyseed
  • 3/4 cup white vinegar
  • 1 1/2 cu. oil
  • 3/4 c. sugar
  • 1 1/2 tbsp grated onion
  • 1 1/2 tsp. salt
  • 3/4 tsp. dry mustard
Mix all dressing ingredients together and put on salad last.

You can go with a lot less chicken or make salad without chicken. Often I make only  1/2 the salad dressing because it makes a lot. You can really vary the amounts of the ingredients--but don't change the dressing--it makes the salad.
